Made my BLUEBERRY CRUMBLE PIE OATMEAL PROTEIN MUFFINS with Maple Coconut Frosting yesterday and asked myself why i don’t make them more often😂 They’re just the tastiest!😍😭 These muffins are free of dairy, refined sugar & they’re seriously our favorite! Ingredients: 1 3/4 c oatmeal flour (or blend oats in food processor or blender) 1/4 c coconut sugar (increase to 1/2 cups of you like sweeter muffins) 2 scoops @vitalproteins collagen peptides (optional)* 2 1/2 tsp baking powder 3/4 tsp salt 1 egg, well beaten 3/4 c almond milk 1/3 c coconut oil 1 c blueberries preheat oven to 400F. mix together dry ingredients. combine almond milk, egg and coconut oil and add to dry ingredients. then, add blueberries but make sure you don’t over mix. put the batter in a greased muffin pan and bake for 20-22 minutes. Drizzled my muffins with 2-ingredient maple coconut frosting (recipe on @ahealthyharmony feed). *I do not recommend using any other protein powder as it can affect the taste of the muffins. I used Vital Proteins as it has no taste and it works great for the baked goods (it’s optional tho). ENJOY! #healthymoodsf #healthyrecipes
